Hello my little lovlies…you look so delicious.
My mom informed me that she had these incredible brownies at my grandma’s house. Now, when we think of my grandma, we think of pies, cookies, homemade jellies, homemade sauces, fudge, candy,…..well, you get the point! I told my mom I would be right over to pick up a batch…and then she told me they were made with black beans…and I told her I would be over to pick up two batches!!!
Don’t worry. This recipe isn’t entirely healthy. See?
And…it keeps getting better. We add sugar, cocoa, and coffee!!! Yes, coffee.
Pulse, pulse, pulse, mix, mix, mix….
I actually thought about just pouring that into a glass and having myself a chocolate milkshake. It really IS that chocolately!!!
Now…the best part…
Sprinkle with chocolate chips!
Black Bean Brownies
1 can black beans; rinsed and drained
3 tablespoons vegetable oil
1/4 cup cocoa powder
1 pinch salt
1 teaspoon vanilla
3/4 cup granulated sugar
1 teaspoon instant coffee powder
1/2 cup semi-sweet chocolate chips (I used 3/4 cup)
Preheat oven to 350°. Lightly grease an 8×8 baking dish. Combine all ingredients, except chips, in a blender (I used my processor). Blend until smooth. Pour mixture into dish. Sprinkle with chocolate chips. Bake until top is dry and the edges start to pull away from the dish, about 30 minutes. These brownies are much more dense than regular cake brownies.
Now, go and make these and pour yourself a HUGE glass of milk! You are going to need it!!!
