Butterscotch is a funny thing.
I think I liked it when I was little? My grandma used to always keep those little hard butterscotch candies in her house. Come to think of it, I think my dad always had them in our house too. I used to eat them all of the time but I don’t know if I really liked butterscotch or if I just liked being able to eat candy.
Fast forward to today. I am no longer a fan of those little butterscotch candies. I also am not a fan of butterscotch pudding. I really can’t put my finger on what I don’t like about butterscotch but I am thinking that maybe it’s too sweet for me? I really don’t have a sweet tooth. I would eat a savory dinner over a sweet dessert any day. Maybe that’s the problem? I really can’t be sure.

You might be wondering why I’m sharing a recipe that has the word butterscotch in the title if I don’t like it. The answer to that has to do with what the butterscotch is paired with.
Not only chocolate cookies, but chewy chocolate cookies. Is there anything better than a chewy cookie? I think not.
I think I would even eat an onion cookie if it was chewy. Wait. I’m sorry. I think I just blacked out. Please disregard that last sentence.
Chewy Chocolate Butterscotch Cookies
Adapted from AllRecipes
1-1/2 cup butter, melted
2 cups white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups butterscotch chips
Preheat oven to 350°.
In a large bowl, mix together the butter and sugar. Beat in the eggs and the vanilla. In a small bowl, combine flour, cocoa, baking soda, and salt. Gradually stir the dry mixture into the butter mixture. Fold in the butterscotch chips.
Drop by rounded teaspoons onto ungreased cookie sheets. Bake 8-10 minutes. Cool on baking sheet for 1 minute before placing on wire rack to cool completely.
Yield: 5 dozen
