I have a love-hate relationship with potatoes.
I love to eat them. I hate to cook them. Weird, huh? Seriously, how hard is it to make a potato? I have mentioned before that I made real mashed potatoes for the first time ever when I was 26 years old. Yes, that is a true statement. I have never in my life made a baked potato. Yes, that is another true statement. Please stop laughing. I never buy potatoes either. I NEVER have them in my house. But….I LOVE THEM!!!
I have made roasted red potatoes and they are my absolute favorite, but as much as I enjoy them, I have only made them like three times. I have no idea what it is. I eat a ton of potatoes…but they are always made by someone else. Except today.
Yeah, I cut those all by myself. Whoop Whoop! 😉
These potato wedges are highly customizable! You can pretty much put on any combination of spices that you like. You can also use regular bread crumbs instead of Panko, which I used on these little taters.
Crispy Parmesan Potato Wedges
4 medium red potatoes
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1/4 cup Panko bread crumbs
1-1/2 teaspoons paprika
3/4 teaspoons salt
1/4 teaspoon oregano
1/4 teaspoon marjoram
1/4 teaspoon cumin
1/8 teaspoon pepper
Preheat oven to 375°.
Add potatoes to a gallon-sized storage bag*. Add oil and remaining ingredients to the bag. Shake potatoes until they are completely coated. Remove potatoes from bag and place onto a greased baking sheet in a single layer.
Bake for 30-35 minutes, turning once during baking.
*I was out of storage bags, so I just mixed everything together in a large bowl and it worked just fine.
This recipe could probably serve two people. I say probably because most people wouldn’t eat all of the wedges herself by themself. However, some people might. I did didn’t. I’m just sayin’.
