If you remember, I had a personal day yesterday. I liked it for multiple reasons.
1. I wasn’t at work.
2. I got to spend the afternoon with my police officer.
3. I got a TON of stuff done around the house.
4. I wasn’t at work.
….emphasis on #1 and #4.
Anyway, spending the afternoon with the police officer gave us the opportunity to have lunch together. He usually eats really healthy stuff like frozen chicken nuggets and french fries with maybe a PB&J thrown in every now and then. Yesterday, I didn’t stray very far from his regular items, but instead of feeding him frozen chicken nuggets, I made him homemade chicken tenders.
I couldn’t decide between BBQ sauce or Buffalo sauce (which I kind of despise), but Buffalo won in the end. The police officer likes it best. 🙂
The tenders are actually healthy! WooHoo! I used whole wheat flour, Panko bread crumbs and didn’t use any egg.
Honestly. This whole raw chicken thing is growing on me. I know. It’s crazy!! I’m not even afraid of it anymore!
Mmmmm. These look good enough to eat. Um, I guess that’s what you’re going for when you cook, right?!
Healthy Buffalo Chicken Tenders
~these measurements are very approximate. I just kept filling up the plates until all the tenders were coated.
1 lb. chicken breast tenderloins
3/4 cup whole wheat flour
1 tablespoon paprika
1 cup buffalo marinade sauce
1 cup Panko bread crumbs
Preheat the oven to 450°.
Using 3 separate plates or bowls, put the flour and paprika on the first, the buffalo sauce on the next, and the bread crumbs on the last. One tenderloin at a time, cover in flour, move to the buffalo sauce and cover totally with sauce, and immediately cover in the bread crumbs. When completely covered, place tender on a baking sheet sprayed with non-stick spray.
Bake in the oven for 12-15 minutes. Flip the tenders over and cook for another 12-15 minutes or until chicken tenders are completely cooked through.
Serve with ranch or blue cheese dressing.
They are sooo crispy and sooo delicious!

This lunch made the police officer feel like he was right at home. Chicken tenders and mac n’ cheese. He couldn’t even tell I was making him eat healthy!
