TGIF!!! Yay for Friday!
So, since Fridays are so awesome, I thought I would share a recipe that is awesome! I had already posted a recipe for a reduced-fat version of fettuccini alfredo, but I decided to tweak it and take some better pictures! My pictures are far from being anything to talk about, but the ones when I first started this blog a couple of months ago? Just awful!
Anyway, pasta seems perfect for Fridays. I’m not sure why. Maybe because my family and I used to always go out for Italian Friday nights? Maybe because I don’t eat meat on Fridays during Lent and I turn to pasta? Maybe because I’ll look for any excuse to eat pasta and because it’s Friday seems like a good one? I’m not totally sure.
This alfredo is made with low-fat ingredients!
Yes. I’m totally serious.
Garlic, a tiny amount of butter, flour for thickening, milk and….get ready for it….cheese!!!
Whole wheat pasta. See? I said it was healthy.
Light Fettucini Alfredo
8 ounces pasta, such as fettuccini or linguine
2 cloves garlic, minced
1 tablespoon flour (if using skim milk, increase flour to 1-1/2 tablespoon)
1-1/3 cup low-fat 1% or skim milk (I find it better to use 1%)
2 tablespoons 1/3 reduced-fat cream cheese
1-1/4 cup shredded Parmesan cheese (I have also used grated Parm)
1/4 cup Italian blend shredded cheese
1/2 teaspoon salt
black pepper and fresh parsley for garnish
In large saucepan, boil water and cook pasta according to to package directions.
Melt butter in large skillet or saucepan over medium heat. Add garlic and cook for 1 minute. Add flour and stir until combined. Gradually add milk, whisking together until smooth. Continue cooking milk mixture until thickened, about 6 minutes, while constantly stirring. Add in cheese and whisk together until melted.
Drain pasta and return to pot. Pour sauce over pasta and mix well or plate pasta and pour sauce over just before serving. Sprinkle with black pepper and parsley.
I suggest you make this for dinner tonight. You know, because it’s Friday, and pasta is made for Fridays.
Whatever that means.
