You know what else is the best? Pizza! Pizza and Fridays go hand in hand for me. Growing up, we would usually get pizza on Friday nights and settle in to watch TGIF. Full House, Family Matters, Perfect Strangers, and Just the Ten of Us. When did Step by Step move into that lineup? Why the heck was Just the Ten of Us even a show? Does anyone besides me even remember that!?
OMG. Speaking of awesome shows. I heard an amazing announcement today….
Like, a really awesome announcement that I can’t even handle…
From 10pm to 2am, seven days a week, TeenNick is airing episodes of our favorite 90’s Nickelodeon shows!
I hope there are those of you out there that are as excited as I am! Salute Your Shorts, Hey Dude, Doug, Rugrats, Clarissa Explains It All, Roundhouse (I was never really a fan, but I watched), Are You Afraid of the Dark (I will still be as scared as I was when I was younger), and the list goes on and on. See why I can’t handle this announcement? It might be the best one ever!! I seriously need to take a deep breath. They are just TV shows. They are just TV shows. They are just TV shows. Alright. Back to calm.
Anyway…back to Fridays and pizzas. I wanted to share this recipe with you on a Friday in hopes that you will make it for dinner tonight. Please share it with your friends and family. Or, just eat it all yourself. It’s really that good and I allow you to do so. After all, anything pretty much goes on a Friday night after of work. Eating entire pizzas is totally acceptable.
You know what else is totally acceptable? Making dough that doesn’t have to rise for more than ten minutes. Who has time to wait on dough when there are amazing TV shows to watch?
Most Awesome Pepperoni Pizza
2-1/2 cups all-purpose flour (I sometimes do a half/half mixture of all-purpose and wheat flour)
1/2 teaspoon salt
1 packet (1/4 ounce) active dry yeast
1 tablespoons plus 2 teaspoons olive oil
1 cup lukewarm water
3/4 cup pizza sauce
12 ounces mozzarella cheese
toppings of choice*
Preheat oven to 400.
Lightly grease a 12×9 baking sheet or a round pizza pan.
Sift flour and salt into a large bowl (I usually just add the flour and salt to the bowl and sift with a fork). Stir in the yeast. Make a well in the center of the flour mixture and add in olive oil and lukewarm water. Mix until a soft dough forms.
Turn dough out on a lightly floured surface (be sure to also lightly flour your hands) and knead gently for 5 minutes. Roll out dough with a rolling pin and press onto prepared baking sheet. If you don’t want to roll the dough with a pin, just pressing it onto the baking sheet works as well. Just be sure to press the dough outward from the center and be careful not to make it too thin. It should be no thinner than a 1/4 of an inch. Cover and allow the dough to sit at room temperature for 10 minutes.
Bake dough for 5-7 minutes and remove from oven. Spread pizza sauce on top leaving about a 3/4 inch border. Sprinkle with mozzarella and then add toppings. I used pepperoni and mild pepper rings for this particular recipe. Sprinkle with oregano and black pepper and drizzle with olive oil. Bake until golden, 15-20 minutes.
Slice pizza and serve.
Yield: 8 slices
