My dinners have been lacking the past two days. By lacking, I mean they have been less than healthy. Thursday night: pulled pork sandwich and french fries
Friday night: cheese sticks, onion rings, fresh potato chips
My body isn’t liking me. I think I heard it yell, “Enough with the fried food already!”
This morning, I fixed that. I like to keep my body happy. It’s the only one I have and I would hate for it to be mad at me. I don’t like confrontation.
I made muffins that are good for your heart. Wasn’t that nice of me?
I try to do nice things you for guys.
Oatmeal Apple Muffins
3/4 cup fat-free half and half
3 tablespoons olive oil
1/3 cup sugar or Splenda
1 medium apple, peeled and chopped
1 cup whole-wheat flour
1 cup quick-cooking oats
1/4 teaspoon salt
1 tablespoon baking powder
1./2 teaspoon nutmeg
2 teaspoons cinnamon
Preheat oven to 450.
In a bowl, beat together egg, half-and-half, oil, and sugar. In a large bowl, combine remaining ingredients. Fold egg mixture into dry mixture, just to moisten.
Fill non-stick muffin tins 3/4 full. Bake 15-20 minutes or until toothpick inserted in center comes out clean.
Yield: 12 muffins
