These granola mini bars are the most delicious thing you will ever try. I’m pretty sure I say that about everything, but honestly, I could eat the whole pan in a day. I’m sure of it. These were always made on constant rotation at my parent’s house. As soon as one pan was gone, my mom was putting another in the oven. They are so easy to grab on the go. They are really easy to grab as a late-night snack. They are really easy to grab as you pass by on your way through the kitchen. Every time you walk through the kitchen.
Everything in this recipe is so yummy! Peanut butter, honey, peanut butter and chocolate chips!? Perfect!
And, since it’s granola? It’s healthy! The granola totally cancels out the honey, the brown sugar (like Jessica says, “it must be good for you…it’s brown) and the chips!!
This recipe is the quickest and easiest thing you will ever make. I promise! I am a big fan of recipes like this. I get home late most nights and anything that I can just throw together and pop in the oven makes my life a little easier.
However, my grandma sent home a jar of her spaghetti sauce with my mom last night and I made the mistake of telling the police officer that I stopped to pick up the jar at my parent’s house. The jar never stays unopened for more than a day in our house. He mentioned that he wished he could have some spaghetti when he got home from work. He worked until 2AM last night, so…..
…after this came out of the oven, which was after 11PM, I threw on some boiling water to make some pasta. I left the little container of pasta on the counter, next to my grandma’s jar of spaghetti sauce. Next to that was a Saint Patrick’s Day card for him with instructions on how to heat up his pasta. I figured it was easy enough (put it in the microwave) but you can never be too sure. Right, ladies?
While my pasta boiled, I picked at the granola.
It’s fine. It’s good for you.
Peanut Butter Granola Mini Bars
1/2 cup reduced-fat creamy peanut butter
1/3 cup honey
2 tablespoons canola oil
1 teaspoon vanilla extract
3-1/2 cups old-fashioned oats
1/2 cup packed brown sugar
3/4 teaspoons salt
1/3 cup peanut butter chips
1/3 cup semi-sweet chocolate chips
Preheat oven to 350.
In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended (I just hand-stirred this). Combine the oats, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in the chips. The batter will be sticky.
Transfer to a 9×13 baking dish sprayed with non-stick spray. Bake at 350 for 14-16 minutes until set and edges are slightly browned. Cool on a wire rack. Cut into bars.
