So, remember yesterday?
When I was deciding what I could do to sweeten up my police officer, I knew I didn’t have much time and had to make a decision! He was going to be heading home from work any minute! The light bulb went off and I remembered a peanut butter cookie recipe that my aunt had given me. It uses 3 ingredients. Yes, I said 3. I ran to kitchen to get things started! I had to hurry!
First of all, I would like to draw attention to my recipe basket. Isn’t it the cutest and so clever? It holds my recipes inside and provides me with a little ledge to rest my recipe card on! Genius!
I also want to point out that my aunt’s name is not Cece. It is actually Cynthia. Everyone calls her Cindy and, apparently, when I was little, I could not say Cindy and would say Cece (pronounced ‘see-see’). How the spelling came about? I have NO idea. Anyway, the name stuck and, eventually, it got shortened to Cec (pronounced ‘seese’). We still stuck with the old spelling, though.
Ok, enough with the family history and onto the cookies!
In that bowl? 1 cup of sugar and 1 egg. It looked like lemon sorbet or lemon Italian ice or something delicious like that. Caution: it is a raw egg mixture, not lemon sorbet.
Then we add a cup of peanut butter to the lemon sorbet raw egg-sugar mixture.
Dear Peanut Butter,
Thank you for helping me get what I want.
Peanut Butter Cookies
1 cup granulated sugar
1 cup peanut butter
Preheat oven to 350°.
In large bowl, combine the egg and sugar until blended well. Fold in the peanut butter.
Allow cookie dough to sit for 5 minutes. Drop by rounded tablespoons onto a baking sheet covered in parchment paper or sprayed with non-stick spray. (I rolled mine by hand instead of dropping by spoonful…I think they make more uniform cookies).
Bake cookies for 8-10 minutes or until slightly browned. Cookies will be very soft when they first come out of the oven.
These cookies are so fast and easy to make and use ingredients that everyone should have on hand! What could be more perfect!?
