The sun was out yesterday.
That hasn’t been happening too often around here so it really got me thinking.
Thinking about summer.
Thinking about cookouts.
Thinking about parties.
Thinking about party food.
There is always a logical sequence of thoughts between food and anything else in the world.
I know. You are all totally thinking, “What the h-e-double hockey sticks is in that food processor!?”
The answer to that is, “Something totally amazing!”
And even more amazing? Homemade tortilla chips! Have you ever made them? If you haven’t, I suggest you get on that! They are better than any store-bought chips you will ever buy!
Slice. Bake. Dip. Devour.
White Bean, Carrot, and Curry Dip
1 can cannellini beans, drained and rinsed
1/2 cup baby carrots or sliced carrots
1/4 cup shredded mozzarella cheese
1/4 cup shredded Asiago cheese
1 clove of garlic
2 teaspoons curry powder
1/4 teaspoon salt
1-2 tablespoons olive oil
Add beans, carrots, cheeses, garlic, curry powder and salt into a food processor. Process until carrots are fully chopped and mixture is combined. Continue processing and stream in olive oil, starting with 1 tablespoon and adding more until mixture is smooth and creamy.
(*Note: I really like the taste of curry. If you prefer less, start with 1 teaspoon of curry powder and add more to taste.)
Homemade Whole-Wheat Tortilla Chips:
3-4 whole-wheat tortillas
olive oil for brushing
salt, to taste
Preheat oven to 350.
Brush each tortilla lightly with olive oil. Stack tortillas on top of each other and slice into halves. Slice again into quarters and, finally, slice each quarter to create 8 tortilla pieces.
Place individual tortilla pieces onto baking sheets and sprinkle with salt. Bake in oven for 10-14 minutes. Check the chips after 10 minutes and allow to bake longer, if necessary. Chips should be crisp and just starting to turn brown. Be very careful not to over-bake them; they will brown quickly.
Serve with dip.
